It's the widely accepted target for soups and simmered dishes. You can adjust it to light (0.6%) or full-flavored (0.8%) as needed.

How is the salt content of soy sauce and mirin calculated?

Each seasoning uses a salt content percentage (per 100g). You can register custom seasonings with precise values for more accurate results.

What is cooking-mode correction?

Simmering evaporates water, concentrating salt, so the output is reduced. Steaming adds condensate, so it's increased. The tool adjusts automatically.
